Squash Soup Topped with Roasted Squash Seeds |
Squash soup is easy to make and very delicious. A five star soup at home can be accomplished with minimal hands-on time and supplies. All you need is a winter squash of some kind an oven, a blender and some spices.
What You Need:
-1 Winter Squash (Acorn, Butternut, Pumpkin, etc.)
-Garlic
-Salt
-Pepper
-Olive Oil
-Coconut Milk (optional)
What You Do:
1) Set the oven to 350, cut the winter squash in half, take the seeds out.
2) Put the squash on a pan of some kind, cut side down, add water to the pan (to keep the squash hydrated).
(Optional) - Wrap a few heads of garlic in tin foil with a touch of avocado oil and put on the pan with the squash - this gives you roasted garlic, it's done when the squash is done.
3) Cook for 1 hour.
4) Check the squash, flip them so the cut side is up, if a fork pierces the inner flesh easily, it's done, if not, put back in the oven for 30 minutes or until the flesh can be pierced easily.
(Optional) - Place the squash seeds in a pan with avocado oil and salt - bake in the oven. Stir and check every 10 minutes or so. They're done when golden brown. Set aside to top the soup with.
5) Spoon the flesh of the squash into a blender.
6) Add olive oil and/or coconut milk to the blender to thin the squash out.
7) Add salt, pepper, and roasted garlic to taste.
8) Blend up the squash.
9) Now you have soup.
10) Pour into bowl and enjoy!
