Why must we make things so complicated?
We're so used to everything in our world being very, very complicated that we rarely take the time to take a few steps back and ponder, "Is there an easier way?"
We've already explored steaming and sautéing vegetables, both of which are already fairly simple. There is a better path of least resistance though.
Eating your bounty raw!
This does not apply to all vegetables but it does apply to a lot of them. Your leafy greens: lettuce, spinach, kale, chard, etc. can all be eaten raw as can your beans, snow peas, tomatoes, cucumbers, ground cherries and probably some others that I'm not thinking of at the moment.
Salad is the most common form of eating raw but it doesn't need to be limited to a "true" salad. Grab a handful of beans and you have yourself a hardy snack and perhaps even a full meal.
It truly can be that easy. When summer rolls around I can often be found snacking on whatever is currently ripe, straight in the garden. There isn't any need to prepare an actual meal when you are literally surrounded by extremely tasty ingredients that don't need any cooking.
Next time you're in a rush, don't fret, just walk out to the garden and grab a few handfuls of whatever is currently in season and that you think you will enjoy eating raw.
